Ingredients
This vegan breakfast sandwich has 2 parts, the tofu egg patty and the assembling of the sandwich. Here is what you will need to make this tofu breakfast sandwich:
Ingredients for the Tofu Egg Patty:
- Tofu - the "egg" of this recipe, use extra firm or firm tofu
- Liquid Aminos - used to marinate the tofu, you can also use tamari or soy sauce
- Dry Seasonings - nutritional yeast, turmeric powder, garlic powder, onion powder, smoked paprika (or chili powder), salt & pepper
- Cornstarch - is gluten-free and adds a crispy breading around the tofu patty
Ingredients for the Vegan Breakfast Sandwich:
- Bread - your favorite bread or gluten-free bread
- Vegan Butter
- Vegan Cheese - you can use shreds or slices
- Sandwich Condiment Ideas - mustard, mayo, vegan aioli, hot sauce
- Sandwich Topping Ideas - tomato slices, avocado, pickled onion, crispy potato slices
- Black Salt - this ingredient is optional, but if you really enjoy the taste of traditional eggs, this will give it that sulfur taste and aroma that real eggs have. Black salt is also known as kala namak and can be found in most Indian markets.

Equipment: tofu press (optional), alternatively you can use paper towels or kitchen towels and some heavy cookbooks.
Instructions
How to make tofu egg patties:
Remove the tofu from the packaging and drain off the liquid. Press the tofu for 15 minutes either using paper towels and something heavy like some cookbooks or using a tofu press.
Once the brine is pressed out of the tofu, cut the tofu into slabs, approximately 1 cm thick. You want the tofu thick like an egg patty would be and not too thinly sliced so it doesn't break apart.
Once you have your tofu egg patties (or slabs) cut, marinade the tofu in liquid aminos or tamari for at least 15 minutes or even overnight.
While the tofu is marinating, mix the dry "egg" seasoning ingredients together in a small bowl, nutritional yeast, cornstarch, turmeric powder, garlic powder, onion powder, smoked paprika (or chili powder), salt, and pepper, and set aside.
If the tofu absorbs all the marinade, recoat with a little extra liquid aminos. Then coat the tofu patties by dipping each side in the dry "egg" seasoning mix.
Once the tofu patties are nicely coated, grab your pan and heat it to medium heat on the stovetop. Add the coconut oil or oil of choice and once the pan is heated add the tofu egg patties and pan-fry until golden brown, about 3-5 minutes on both sides. Make sure not to overcrowd the pan.
Assembling the Vegan Breakfast Sandwich with Tofu Egg Patty:
Grab your bread (or gluten-free bread for gluten-free option) and spread vegan butter on the outsides, kind of like if you were making a grilled cheese.
Heat a pan to low-medium heat. Lay the buttered sides of bread in the pan and add vegan cheese to one of the sides facing up (the inside of the sandwich). Cover with a lid to help the cheese melt faster. Cook until the outside of the bread starts to turn golden brown and crispy.
Once the bread is crispy golden brown remove it from the pan and build your vegan breakfast sandwich. Add any condiments you prefer to the bread without the vegan cheese, like vegan mayo, mustard, vegan aioli, or avocado - sliced or mashed.
Then top the sandwich with the tofu egg patty, and sprinkle the patty with black salt if you like (completely optional). Add any other toppings you prefer, like tomato slices, crispy potato slices, or pickled onion.
