This creamy cashew salad dressing is an oil-free vegan salad dressing with a touch of lemon!
This cashew dressing pairs well with massaged kale, like this kale veggie wrap with blackened tofu or drizzled on some roasted potatoes or veggies.
Ingredients
To make this oil-free vegan salad dressing, you need just a few simple ingredients and seasonings that you likely already have on hand. Here is what you need to make this cashew dressing:
- raw cashews
- fresh lemon juice
- filtered water
- dry seasonings: garlic powder, onion powder, dried parsley, paprika powder, salt & pepper

Instructions
Prepare the cashews by soaking them in water for at least 30 minutes or preferably 6 hours or overnight.
After the cashews have soaked, drain and rinse them in a strainer.
In the blender, add soaked cashews, water, lemon juice, garlic powder, onion powder, dried parsley, salt, pepper, and paprika.
Starting on low and working your way to high speed, blend until you get a smooth and creamy sauce.
Enjoy with your favorite salads, drizzled on roasted veggies or potatoes, veggie dip, or veggie wraps. Keep any cashew dressing leftovers in the refrigerator.
Storage
Store in a container with a tight-fitting lid in the refrigerator for up to 7 days.

Notes
